My friend and I happened to be at the brewery across the street when we noticed the sign for this place. After looking it up, we booked a factory tour + tasting for our last few hours on the island before flying home. Parking took a little while to find but we followed their suggestion of parking in a structure a short walk away (which we got validated at their SALT location). We were the only two people signed up for the group tour so it was a great 'private' event guided by Orien. He was super knowledgeable about the history, engaged us to learn our baseline on chocolate, and answered questions as he walked us through the production process. It was incredible sampling the bean straight from the pod (eating the pulp around it) and then tasting the progression on the way to becoming a finished product (various times during the refining steps). The tour ended with a guided tasting of six samples which helped explain the nuances that you wouldn't get without having the context provided by Orien. Samples included a few pieces that were different varieties of 77% and 67% pure chocolate bars and then 4 with unique add-ins and flavors. In the sales room we got to try additional types of chocolate and I purchased a few bars for gifts. Highly recommend this tour if you have the time, weather is questionable, or you just love chocolate. With the tour, tasting, and shopping, it was about 2 hours start to finish.
