We had a fantastic morning with Amy at Nauti Sisters Oyster Farm. It was just the two of us on a small boat on a beautiful Maine afternoon, and the experience exceeded our expectations. What surprised us most wasn't just learning how oysters are grown -- it was hearing the story behind the farm itself. Nauti Sisters is a modern aquaculture startup, and Amy shared how the sisters were mentored through Maine's aquaculture programs and gradually built their business. Being out on the farm made us appreciate how much work goes into producing a single oyster. We pulled up the grow-out bags, examined young oysters, watched the sorting process, and learned why the bags are regularly flipped to produce the strong, deep-cupped shells you see in restaurants. It was also striking to see how quickly mussels, seaweed, and other marine life try to colonize the gear, making it clear that oyster farming is constant hard work. After seeing the entire process -- from tiny seed oysters to market-ready shells -- we'll never look at an oyster the same way again. And, of course, tasting oysters harvested just moments before was the perfect ending. If you're looking for more than a tasting and want a genuine look at modern Maine aquaculture, we highly recommend this tour. Thanks, Amy, for a memorable morning.
